Step 1
Bake the Cake Layers
Preheat oven to 175°C (350°F). Grease and flour three 8-inch round cake pans. In a large bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla. In another bowl, whisk flour and baking powder. Alternate adding dry ingredients and milk to butter mixture, beginning and ending with dry ingredients. Divide batter among pans. Bake 25-30 minutes until a toothpick inserted in center comes out clean. Cool in pans 10 minutes, then turn out onto wire racks to cool completely.
Step 2
Prepare Strawberries and Whipped Cream
While cakes cool, prepare strawberries by hulling and slicing them. Reserve some beautiful whole or halved strawberries for decorating the top. In a large, chilled bowl, pour cold Holla Whipping Cream. Using an electric mixer with chilled beaters, begin whipping on medium speed. As soft peaks form, gradually add powdered sugar and a splash of vanilla extract. Continue whipping until stiff peaks form—the cream should stand up straight when you lift the beaters. Be careful not to over-whip. Refrigerate until ready to use.
Step 3
Assemble the First Layer
Place your first cake layer on a serving plate or cake stand. If the cake domed during baking, you can level it with a serrated knife for a more professional look. Spread a generous layer of whipped cream over the top of the cake (about ¾ to 1 inch thick). Arrange sliced strawberries over the whipped cream, covering the surface completely. Press them gently into the cream.
Step 4
Continue Layering
Place the second cake layer on top of the strawberries and cream. Repeat the process: spread whipped cream, arrange strawberries. Top with the final cake layer. At this point, you should have a tall, impressive three-layer cake. Use the remaining whipped cream to frost the top and sides of the entire cake. You can make this as smooth or as rustic as you like—both look beautiful.
Step 5
Decorate and Chill
Decorate the top of the cake with the reserved whole or halved strawberries, arranging them in a beautiful pattern (a ring around the edge, a pile in the center, or covering the entire top). You can also add a few fresh mint leaves for color. Refrigerate the cake for at least 2 hours before serving to let everything set. This also makes slicing much easier. Serve chilled and store any leftovers (if there are any!) in the refrigerator.
