Step 1
Sauté Aromatics
Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook for 5-7 minutes, stirring occasionally, until softened and translucent. Add minced garlic and cook for another minute until fragrant. The aromatic base is crucial for building deep flavor in your soup.
Step 2
Add Tomatoes and Simmer
Pour in the entire liter of Holla Passata di Pomodoro and vegetable broth. Stir well to combine. Add most of the fresh basil leaves (reserving some for garnish), tearing them slightly to release their flavor. Season with salt, pepper, and 1-2 teaspoons of sugar to balance the tomato acidity. Bring to a gentle boil, then reduce heat and simmer for 15 minutes, stirring occasionally.
Step 3
Blend Until Smooth
Remove the pot from heat. Using an immersion blender, blend the soup directly in the pot until completely smooth and creamy. If you don't have an immersion blender, carefully transfer the soup in batches to a regular blender (let it cool slightly first and don't fill the blender more than halfway to prevent hot liquid from erupting). Blend until silky smooth and return to the pot.
Step 4
Add Cream and Finish
Return the pot to low heat. Stir in most of the Holla Cooking Cream, reserving a few tablespoons for garnish. Stir until well incorporated and heated through—don't let it boil. Taste and adjust seasoning with more salt, pepper, or a pinch of sugar if needed. The cream should give the soup a beautiful, velvety texture and gorgeous color.
Step 5
Serve with Style
Ladle the hot soup into bowls. Drizzle the reserved Holla Cooking Cream on top in a decorative swirl or pattern. Garnish with fresh basil leaves. Serve immediately with crusty bread, grilled cheese sandwiches, or your favorite crackers. Enjoy the comfort!
